Chatkhara chicken is a spicy, tangy, and flavor-packed chicken drumstick recipe that’s perfect for fried chicken lovers. Marinated twice with green chilli, lemon juice, aromatic spices, and coated in a light flour-cornflour mix, this chicken turns out crispy on the outside and juicy inside. You can fry, bake, or even air-fry these drumsticks for the ultimate street-style taste at home. Serve with chutney, ketchup, or naan for a mouthwatering meal that everyone will crave.

Step by step method
Step 1

First marination: Wash and pat dry chicken drumsticks. Marinate them with ginger garlic, green chilli paste, lemon juice, and enough water to coat. Set aside for 30 minutes.

Step 2

Second marination: Drain excess liquid from the chicken. Add all dry spices, ketchup, lemon juice, maida, and cornflour. Mix well so the drumsticks are evenly coated.

Step 3

Cooking: Fry: Heat oil and fry chicken drumsticks on low-medium flame for 12–15 minutes until golden and fully cooked. Bake: Preheat oven to 180°C and bake drumsticks for 12 minutes (brush with oil for extra crispiness).

Step 4

Serve hot: Garnish with lemon wedges, onion rings, or fresh coriander.

Tips & variations
  • For extra crunch, double coat with cornflour before frying.
  • You can also air-fry at 180°C for 15–18 minutes, flipping halfway.
  • Adjust spice level by reducing or increasing red chilli.
