These fresh and crispy samosas are made with a flaky, golden crust and a spiced potato filling that’s bursting with flavor. Perfect as a tea-time snack, iftar special, or party appetizer, these samosas are vegetarian-friendly but can also be made non-veg by adding chicken or keema.

Step by step method
Step 1

Prepare Dough: Mix flour, salt, and ajwain in a bowl. Rub ghee into the flour until crumbly. Add cold water gradually and knead into a firm dough. Cover and let rest for 30 minutes.

Step 2

Make Filling: In a bowl, combine boiled mashed potatoes with all spices, cumin, and green chillies. Mix well and keep aside.

Step 3

Shape Samosas: Divide dough into small balls. Roll each ball into an oval shape and cut in half. Form a cone from each half, fill with potato mixture, and seal edges with water.

Step 4

Fry Samosas: Heat oil in a deep pan on medium flame. Fry samosas in batches until golden brown and crispy

Step 5

Enjoy hot with chutney or ketchup.

Tips & variations
  • Fry on medium heat for extra crispy layers.
  • Add peas, corn, or paneer for variation.
  • For non-veg, replace potato filling with minced chicken or beef keema.
