Cheesy chicken seekh kababs are a mouthwatering fusion of traditional pakistani seekh kababs with a modern cheesy twist. Made with boneless chicken thighs blended with garlic, ginger, fresh coriander, green chilies, and aromatic spices, this recipe delivers bold flavors in every bite. The addition of cheddar and mozzarella cheese makes the kababs soft, juicy, and perfectly bound without needing extra fillers. These kababs are first marinated, shaped on skewers, and then pan-fried until golden brown while staying tender inside. They are quick, protein-rich, and ideal for family dinners, bbq parties, or festive gatherings. Serve them hot with green chutney, raita, or paratha for a restaurant-style meal at home.
In a blender, add chicken, garlic, ginger, green chilies, coriander, salt, crushed coriander, chili flakes, cumin, garam masala, white pepper, clarified butter, lemon juice, and onion.
Step 2Blend until a smooth mixture forms.
Step 3Transfer the mixture into a bowl and add cheddar cheese and mozzarella cheese.
Step 4Mix well until fully combined. (This will help bind the kababs.)
Step 5Cover the bowl with plastic wrap and refrigerate for 1 hour.
Step 6Grease your hands with a little oil and shape the mixture onto skewers to form seekh kabab shapes.
Step 7Heat 2 tbsp oil in a pan and place the kababs carefully.
Step 8Cook on medium flame, turning occasionally, until golden brown
Step 9Do not overcook—keep them juicy!
Step 10Serve hot with mint chutney or your favorite dip.
