Skip the takeout! These homemade chicken teriyaki subway sandwiches are even better than the ones you buy at subway. With soft, freshly baked bread rolls, juicy chicken tossed in rich teriyaki sauce, and a medley of fresh veggies, every bite is packed with umami flavor and freshness. Perfect for lunch, dinner, or meal prep!
Make Subway-Style Bread In a bowl, whisk flour, yeast, and salt. In another bowl, mix oil, melted butter, milk, and honey. Combine wet and dry ingredients; knead until smooth and elastic (10 mins by hand or 6–7 mins in mixer). Cover with a damp cloth; let rise 1–1.5 hours until doubled. Punch down, divide into 5 equal pieces (~200 g each). Shape each into an 8-inch log, place seam-side down on a lined tray. Brush with milk, sprinkle parmesan/herbs/seeds if desired. Score tops lightly and let proof 30 mins until puffy. Bake at 200°C (390°F) for 10–15 minutes, until golden.
Step 2Cook Chicken Teriyaki Marinate chicken with salt, paprika, black pepper, and chicken powder for 15–30 mins. Heat oil in a pan, sauté ginger until fragrant. Add chicken, cook until golden and tender. Stir in teriyaki sauce and cook 2–3 mins. Sprinkle sesame seeds.
Step 3Assemble Sandwiches Slice bread rolls and toast lightly. Spread mayo on both sides. Add salad leaves, cucumber, tomatoes, onions, and pickled jalapeños. Add cooked teriyaki chicken and top with cheese slices. Drizzle with BBQ sauce (optional). Serve warm and enjoy!
