Step by step method
Step 1

Prep rice: Break up clumps with hands or a fork so grains are separate.

Step 2

Scramble eggs: Heat 1 tbsp oil in a hot wok/pan; scramble eggs just set. Remove.

Step 3

Aromatics: Add remaining oil. On high heat, add garlic; stir-fry 20?30 sec (don?t brown). Add spring onion whites; 20 sec.

Step 4

Veg (if using): Add diced veg; fry 1?2 mins on high so they stay crisp.

Step 5

Rice in: Add rice; stir-fry 2?3 mins, tossing so every grain gets hot.

Step 6

Sauces: Add soy, vinegar, chilli sauce; toss quickly so sauces coat evenly.

Step 7

Finish: Return eggs, add pepper and check salt. Add spring onion greens and (optional) sesame oil. Toss 10?15 sec and serve immediately.

Tips & variations
  • High heat + dry rice = restaurant texture. Moist rice turns mushy.
  • Work in batches if pan is small. Overcrowding = steaming, not frying.
  • Add sauces around the pan?s edges so they flash against the heat and don?t clump on one spot.
  • Chicken Fried Rice: Add 1 cup diced cooked chicken in step 5.
  • Garlic-Butter Fried Rice: Finish with 1 tbsp butter instead of sesame oil.
  • No-egg / Veg-only: Skip eggs; add more veggies (corn, beans, mushrooms).
  • Fried Rice: Great on its own or with a quick chilli-garlic stir-fried chicken/veggies.
