Boil the potatoes: Peel and cut the potatoes into chunks. Boil them in salted water until just tender (not mushy).
Step 2Mash & mix: Drain and mash the potatoes. Add egg, cornflour, and all seasonings (salt, pepper, oregano, red chilli powder). Mix well into a dough-like consistency.
Step 3Shape the hashbrowns: Take portions of the mixture and shape into medium-sized patties (round or oval).
Step 4Fry until golden: Heat oil in a pan. Fry hashbrowns on medium heat until crisp and golden brown on both sides.
Step 5Serve hot: Enjoy with ketchup, garlic mayo, or alongside eggs for breakfast.
